They say breakfast is the most important meal of the day. It gives us a good start and fuels our body for what’s coming.  In the old days, farmers traditionally started their day with a hearty breakfast that included eggs, meat, and potatoes. I once knew a farmer whose family ate meals in what most people  would consider “reverse order.” They ate their largest meal at breakfast and their lightest meal in the evening. Science actually supports this manner of eating, agreeing that having a large meal in the evening is bad for both our digestion and our waistlines.

It’s all good in theory. The problem is, for myself and a lot of other people, that we just don’t have the time or inclination to cook a large meal first thing in the morning.

Good news! I have a recipe for a hearty breakfast that also satisfies my number one criteria: it has to be simple enough that I could practically do it in my sleep!  Oh yes, and it also has to be delicious. None of this “wheat grass-bean sprout-tofu-protein-fish oil” Glop! Try it and see if you don’t think

Here’s my recipe. Try it and see if you don’t think it satisfies All the criteria for being fast, easy, nutritious and delicious!

Easy No-Crust Quiche

Ingredients:

4 eggs

3-4 cups shredded cheese (I use a variety of whatever I have on hand – sharp, Monterey jack, parmesan, mozzarella, etc)

1 Tablespoon flour

¼ cup milk (I use 2%, but whole or skim also work)

¼ – 1/3 cup salsa verde (can also use plain salsa)

½ teaspoon garlic powder

½ teaspoon ginger

Salt & Pepper to taste

4 oz. mushrooms, sliced and sautéed in a ½ Tablespoon butter

The above ingredients are what I used for my quiche this morning. You can alter these to your liking, adding your favorite ingredients. Really, the only things you must include are eggs, milk, flour and cheese.

Other ingredients: Chopped, lightly sautéed ham; cooked potatoes, cubed; cooked broccoli, chopped; ETC! Use your favorite ingredients!

Put all ingredients in a bowl and mix well. I generally put the flour and egg or salsa together and stir that first, to break up any lumps, but again, it’s all up to you. I have even, on occasion, forgotten the flour all together, and still had the recipe turn out just fine.

Put the mixture in a greased pie pan, and bake at 350 degrees for about 25-30 minutes, until the filling is “set”.

This is such an easy recipe to modify! Toss in whatever vegetables or meat you have on hand, add that leftover baked potato from last night’s supper, some fresh herbs from your garden, whatever you wish. If you’d like it in an omelet, you’ll like it in the quiche!

 

There you have it – fast, easy, nutritious and delicious! It’s my kind of breakfast!
